My husband and I have just finished our first batch of pastured feeder pigs, curing the hams and bacon ourselves, that now fill our freezer along with those of family and friends. We intend to do pastured pork again on a regular basis. One challenge is the avaiability of processing services in this area. We do have a knowledgable friend nearby, with whose help we could process them ourselves, if necessary.

In the future we would like to run some beef cattle. We are looking at mid-size mini breeds, such as Aberdeen or Belted Galloway. One major concern is the availability of processing these animals. This is not really something we want to do ourselves, and we would like to have a solution at hand before commiting.

Mini’s are hard to get beefed up. Me and my husband processed our first pig totally, we watched the bearded butchers, because when we tooK our hog in the processor told us he couldn’t do it because our kune kune was hairy…. go figure.
